Green Juice Recipe

Last week I posted on my instastory the green juice I’ve been making and had people ask me for the recipe! So I thought I would share. I kinda eye stuff when I cook, so this isn’t going to be super scientific. I usually make enough for Jeremy and I both, so feel free to scale back (for example, maybe one cucumber instead of two).

I start with apple, lemon, and cucumber. I like to use one honey crisp apple. I think the sweetness of a honey crisp adds the perfect flavor to a green juice! I use two Persian cucumbers…I get these at Trader Joe’s. And one lemon.

I like to peel all three of these because I feel like the skin of the apple and cucumber can sometimes make the consistency a little weird. (Note: the consistency will be thick already because I’m using a Vitamix). I use a potato peeler to peel the apple and cucumbers, and a pairing knife for the lemon. Then I chop!

I chop the cucumber smaller than I probably need to, but I like to make it a little easier on my Vitamix!

My Lyla girl loves to help…but in reality she’s just hoping her momma will give her some apple. My pups love apple. It’s actually really good for their teeth and breath!

Make sure you remove the seeds from your apple. You can use an apple corer, but I just cut it out with the knife. You need to remove the seeds if you feed your pups apple as well. The seeds of an apple have arsenic and can cause extreme harm if consumed! As I chop the lemon I remove the seeds as well. Lemon seeds won’t cause any harm, but you’ll get some grit in your juice which is no fun!

Before I go on to the greens I add, let me explain why I like to use a Vitamix instead of a juicer. When you use a juicer, you are losing the fiber of the fruits and vegetables you are consuming. Fiber is key in not only balancing the sugar in the juice, but also in helping satisfy hunger and improving digestion. You can read more here! A Vitamix is a great investment. You can make juice, smoothies, soups, chop dry foods, and so much more. My Vitamix was a wedding present from my amazing grandparents, they get one for each grandchild when they get married! You can often find it on sale at Williams Sonoma, on QVC, and at Costco!

Next I add about two handfuls of kale. I get this big bag of kale from Whole Foods. I usually have to blend the juice before I can fit the second handful of kale in! I like to have people do one big handful of kale and then add more to taste (just in case you don’t like it to greenie).

I do one handful of baby spinach. I get my spinach from Trader Joe’s. And then I add about a half glass of water and some ice to taste. The ice cools it down (I usually add 3 or 4 cubes).

So recap:

  • 1 honeycrisp apple (peeled & chopped)
  • 2 persian cucumbers (peeled & chopped)
  • 1 lemon (peeled & chopped)
  • 2 handfuls of kale
  • 1 handful of spinach
  • 1/2 glass of water
  • 3-4 ice cubes

Blend in Vitamix!! You will need to use your tamper when making this, and adjust the speed on your Vitamix gradually to full power.
